Recipes for Hidden Vegetable Sauce

As you can see, only a few ingredients are needed to make substantial, healthy and quick meals using The Hidden Vegetable Sauce. One pot of sauce used for these recipes below will serve 3 – 4 small children or 2 adults and everyone is having 7 vegetables in one dish!

PASTA & SAUCE

You will need: Pasta, basil, parmesan

Cook pasta as per instructions. In a separate saucepan heat Sauce (or cook in microwave). Drain pasta and return to pan. Pour over the hot sauce and stir through. Top with Parmesan cheese and chopped fresh basil.

MEATBALLS WITH SPAGHETTI

You will need: Meatballs & spaghetti

Make or buy pork or beef meatballs approximately the size of a ping-pong ball. Brown meatballs in frying pan, while heating Sauce in a saucepan. Once browned, add meatballs to sauce and cook on low/medium heat for 10/15 minutes. Add to cooked spaghetti and serve!

TIP - Use chicken or turkey meatballs instead

CHICKEN STRIPS & RICE or COUS COUS

You will need: Chicken strips & rice

Pour Sauce into a medium size baking dish. Partially submerge raw chicken strips and spray with olive oil. Bake in medium oven for 15 mins and cook the rice. Alternatively fry chicken in a pan and pour heated sauce over when serving.

TIP - serve with tender stem broccoli for colour and crunch

EASY SHEPHERD’S PIE & PEAS

You will need: Minced lamb, mashed potato, peas & grated parmesan cheese

Brown lamb mince in small batches in a frying pan and drain fat through a sieve over a bowl. Heat Sauce in a medium sized pan. Add browned lamb to Sauce and stir well. Cook for 10 mins. Place in baking dish and top with mashed potato and a little grated parmesan cheese.
Bake in oven for 20 mins and serve with peas.

TIP - shop bought mashed potato works well and is an easy short cut! And for those who don’t mind “bits”, add precooked finely diced carrots and leeks for extra bite

SOUP

You will need: Crusty bread

Add approx. 75 – 100ml of water to Sauce and heat in pan over low heat for 6 minutes. Serve with crusty bread.

TIP - add a small amount of cream or milk, or cooked Orzo pasta to make more of a meal of it.

FALAFEL & COUSCOUS OR RICE

You will need: Falafel, couscous & salad

Heat falafel in medium oven for 6 mins while heating sauce in pan on low heat. Allow for 2-3 per child and 4-5 per adult, Cook couscous as per instructions. Place falafel on plate and pour Sauce over. Serve with couscous and salad.

TIP - add a fresh riata made by combining yoghurt, and finely chopped mint and cucumber.

HOMEMADE PIZZA

You will need: Pizza base, grated cheese, and your choice of toppings

Generously top a plain pizza base with Sauce and top with grated cheddar – and anything you fancy!! I like extra mozzarella and pesto! Cook for approx. 7 mins in a hot oven.

TIP - cut submarine rolls length wise and pop into medium oven for 4 minutes – then use as above

BAKED COD

You will need: Skinless cod loin, lemon, brown rice (or small potatoes) & spinach

Place cod loin in a small oiled baking dish. Pour Sauce over cod until nearly submerged, spray fish with olive oil and cook on high heat for approx. 10 – 12 mins. Serve with brown rice or crushed small potatoes, spinach and a squeeze of lemon.

TIP - add capers & chopped olives before baking to add a more Mediterranean flavour.
